I whipped up this tasty flat bread pizza last night with Flat-Out light flat bread (only 90 calories!) and a white sauce modified from this recipe.
White Sauce (enough for one pizza):
1/2 tablespoon EVOO
1/2 teaspoon minced garlic
1/2 tablespoon flour
1/4 cup low sodium chicken broth
1/16 cup plain greek yogurt
1/16 cup skim milk
(for the last two ingredients I filled an 1/8 cup about half way with yogurt, then topped it off with milk)
1/4 Parmesan cheese
In a small pan heat olive oil, add garlic. Cook until golden brown. (This doesn’t take long at all since there is so little in the pan, I burnt it on my first try and had to start over.) Whisk in flour until smooth. Slowly whisk in broth, yogurt and milk. Bring to a boil and simmer until sauce thickens, about 2 minutes. Stir in Parmesan.
I topped mine with grilled chicken, tomatoes, red onion, spinach and a little mozzarella. Bake for 10 min at 425 and enjoy!
