This dinner is called WhatCanIMakeWithWhatsInMyFridge! I had leftover spicy turkey sausage and pasta along with an assortment of veggies. I originally intended to only make a serving or two, but it ended up making about 4 servings.
Squeeze the sausage out of the casing and break up while cooking. After meat is fully cooked transfer to bowl and set aside.
Chop 2-3 Roma tomatoes, about 1/3 onion (usually I prefer red onion, but all I had was white) and a green pepper. Dump veggies into the same pan used for meat and add a bit of EVOO, garlic powder and Italian seasoning. Cook for about 10 minutes or until veggies are tender.
Add meat to veggies, stir well. Serve on top of pasta with Parmesan.
