This afternoon was cold and blustery, perfect weather for baking! I haven’t had these bars in years, so I called my mom and asked her to hunt down the recipe. The peanut butter oatmeal cookie bottom goes perfectly with the chocolate peanut butter topping for a deliciously gooey treat.
Cream together 1/2 cup butter, 1/2 cup sugar and 1/2 cup brown sugar. Add 1 egg and 1/3 cup peanut butter. Mix well. Add 1 cup flour,1 cup oatmeal, 1/2 teaspoon soda, 1/2 teaspoon vanilla and a pinch of salt. Stir well. Spread in the bottom of a 9 x 13 pan. Bake for 12-13 minutes at 350 degrees. Meanwhile whisk together 1/4 cup peanut butter, 3/4 cup powdered sugar and 3 tablespoons milk. Immediately after taking pan out of the oven, sprinkle with 1 cup chocolate chips. Let sit until melted. Drop spoonfuls of peanut butter mixture on top and swirl.
