The great thing about living alone is that there is no one around to judge you when you consume an entire batch of cookies in less than 48 hours…but the terrible thing about living alone is that there is no one around to judge you for consuming an entire batch of cookies in less than 48 hours. After learning about this first hand…I’ve started making my favorite sweet treats in tiny batches.
A while ago I found a great recipe for a mini batch of chocolate chip cookies. (I scoured my Pinterest boards for the original recipe, but came up empty handed) I altered the recipe slightly to make these black and white cookies. Baking the dough in ramekins makes a warm, gooey personal-sized indulgence.
Cream together 2 tablespoons + 2 teaspoons butter, 2 tablespoons brown sugar and 2 tablespoons sugar. Add 1/2 of a beaten egg and 1/2 teaspoon vanilla. Stir in 2 tablespoon cocoa powder. Add 1/4 cup + 3-4 tablespoons flour, 1/4 teaspoon baking soda, and a dash of salt. Stir until combined and add 1/3 cup white chocolate chips. Divide dough between two ramekins, press down dough slightly. Bake for 12-15 minutes at 375 degrees.
Makes 2 deep dish cookies.
