I love Rice Crispy Treats, I used to work at a cafe on campus that made the. most. delicious. Rice Crispy Treats. They were so deliciously ooey and gooey. Ever since those bars I’ve been adding extra marshmallows and butter to my Rice Crispy Treats. So with St. Patrick’s Day just around the corner it was the perfect time to swap out the classic crispy ingredient for Lucky Charms.
Another reason I love these? They are perhaps the easiest thing to make in the world. I made them start to finish while on the phone. It’s almost impossible to screw them up–I don’t think I’ve ever made a bad pan of cereal bars. Well, except for the time I made them post-party in college…but you don’t want to hear about that. 😉
1 stick butter
8 cups mini marshmallows
6 cups Lucky Charms
Melt butter and marshmallows. Pour marshmallow mixture over Lucky Charms, stir until even coated. Press into a greased 9 X 13 pan. Set aside a few extra marshmallows to sprinkle on top. Let set for an hour or so before cutting.
