These sweet little cupcakes are perfect for St. Patrick’s day with a light green hue. And their moist lightness makes them perfect for celebrations all spring long! Plus the recipe is so easy–it made with a boxed mix! 🙂
Ingredients:
1 box white cake mix + ingredients listed on box
1/2 cup Creme de Menthe, divivded
1 jar hot fudge
1 tub Cool Whip
Directions:
Mix cake batter using direction on box, add 1/4 cup Creme de Menthe. Spoon into muffin cups and bake according to box directions. Warm hot fudge in the  microwave for 30-45 second. Spread onto hot cupcakes. Let cool completely. Mix the remaining 1/4 cup Creme de Menthe into Cool Whip. Spread onto cooled cupcakes.
Omg, I’m pretty sure the hot fudge would never make it onto the cupcake in my case…too decadent! Yum.
OOOOO…I am definitely going to try these! I don’t like frosting, so I think the hot fudge/cool whip combo is genius!
